21 Day Fix: Cuban Style

I am 1/2 Cuban, and although I grew up with an Italian mom, so most of my culinary skills are in Italian food, I have learned a FEW cuban dishes, and here’s one that can be made clean and healthy!

Mojo Pork with Brown Rice and Beans

1 Pork Loin Roast
1 bottle of Mojo sauce
1 medium yellow onion

2 cans of black beans (or if you are authentic and want to make the beans from scratch – go for it!)
1 green pepper
2 cloves of garlic
2 cups of brown rice

Green Beans

Put the pork loin into a crock pot. Cover with 1/2 bottle of Mojo sauce and 1/2 yellow onion, sliced.
Put on high for 4 hours or low for 8 hours.
Once the pork is done, take two forks and shred the pork.

Soak the brown rice in a bowl of water for 1 hour.
Then drain and add 2 cups of rice to a rice cooker with 4 cups of water, 1 Tbs salt, and 1 Tbs olive oil.
Start the rice cooker.

In a sauce pot pour the cans of black beans. Season liberally with salt. In a separate pan, saute 1 yellow onion, sliced, with 1 green pepper sliced, until tender. Add in 2 cloves of chopped garlic at the end, cook everything together until the garlic is fragrant, about 1 minute. Add this onion and pepper mixture to the beans and cook for 20 minutes.

Saute green beans in a pan with a 1/4 cup of water and some salt.
